The warm light spilling out of newly opened El Toro Loco is an inviting call to anyone walking through Grassmarket.

Walking inside the red building, I immediately notice traditional Mexican bull skulls, beautifully decorated, hanging on the walls as well as an ornamental wood cut out of Mexico. Candles inside clay pots warm up the tables carved out of wood. The floor is covered in traditional Mexican coins.

Smiling faces greet my dining partner and I as we head to the colourfully tiled counter to look over the modest menu. Quesadillas, tacos, and burritos are among the choices, but the creative part starts when we order. Our attendant makes the meals before us. An abundance of options are spread out: sizzling beans, saucy meat, fresh salsa and guacamole, cheese and lettuce galore.

After choosing the tacos I let the fun begin. The beans lay a sizzling foundation on the golden shells, which are then stuffed with saucy pork, chicken, and beef. Layered cheese, lettuce, and guacamole complete my delectable trio. My friend also has an enjoyable time

choosing her burrito fillings. We sit down and dig in. My first taco is a juicy mouthful of flavour, the pork tender and the guacamole zesty. The tacos are just the right size, and I finish all three.

This works in my favour when dessert arrives. The flan is silky smooth and sweet, a perfect follow-up. The chilli pepper chocolate mousse takes us on a roller-coaster of tastes. Luscious chocolate melts in my mouth before the chilli pepper zings my throat. This rare combination somehow works delightfully. It’s so unique and tasty that I don’t mind the spiciness.

It’s been a unique night for my taste buds.
